HOT ENTREES:

 Fresh Pasta Station: Choice of penne, bowtie or fettuccini pasta with marinara, pesto sauce or Alfredo sauce.  Add chicken and broccoli to the Alfredo and meatballs to the marinara for a real treat.

 Carving Station: Choose from whole hams, top round roast beef or pork tenderloins.  These choices are served with silver dollar rolls and condiments

 Pork Tenderloin: Whether you choose plain, pecan crusted or cherry marmalade it’s a true delight.

 Sliced Smoked Turkey Breast

 Lemon Pepper Chicken: With or without Hollandaise Sauce and fresh slices of lemon

 Italian Chicken: White breast chicken baked in a variety of fresh Italian herbs and spices

 Mama’s Hand Battered Chicken Tenders: Marinated in buttermilk and dipped in special seasoned flour and then deep fried until golden brown.  Served with BBQ or honey mustard dipping sauces

 Margaret and Charles’ Meatballs: These are made with fresh ground round in a cranberry chili sauce with assorted peppers

 Meatloaf topped with Tomato and Pepper Sauce

Sliders - BBQ pulled pork or chicken
on mini buns topped with dill pickle .

 


COLD ENTREES:

Finger Sandwiches served
on soft croissants or variety round rolls.
You can choose from:
Ham; Turkey; Chicken Salad; Tuna Salad;
Egg Salad; Seafood Salad or Pimento Cheese.
Add a slice of cheese for added flavor.


HOT SIDES:

Baby Red Potatoes: Served with parsley and butter sauce

Mashtini Bar: Mashed potatoes served in Martini glasses.  Topping this with cheddar cheese, chives and bacon bits makes this delicious as well as a beautiful display

Shrimp and Grits: These are served in martini glasses and are a true southern delight.

Chicken and Cornbread Dressing with Cranberry Sauce: Enjoy our famous dressing served not only for the holidays

 Asparagus Casserole:Made in a creamy sauce and topped with bread crust.

Choice of green beans, carrots, corn or peas in butter sauce

Baked Macaroni and Cheese. You can add various cheeses and choose your own pasta.

 


COLD SIDES:

 Texas Caviar: Made with sweet corn and black beans.  This cold relish adds flavor to any meal

 Spring Mix Salad: Fresh baby greens served with your choice of feta cheese, bleu cheese, sugared nuts, strawberries or mandarin oranges.  A variety of dressings is served on the side.

 Tossed Salad:Crispy lettuce with grape tomatoes and cheddar cheese.  Other toppings available by request.

 Greek Pasta Salad: Tri-color pasta with feta cheese, mild banana rings tossed in Greek vinaigrette

 Italian Pasta Salad: Tri-color pasta with choice of green or black olives tossed in an Italian vinaigrette

 Cold Macaroni, Potato or Three Bean Salad: Made homemade with the freshest ingredients

 


COLD HORSDERVES:

•  Mountain of Peeled and Deveined Shrimp: Loads of tasty cooked shrimp piled high on a bed of greens.  Served with cocktail sauce on the side

 •  Shrimp Cocktails: Individual servings of shrimp with cocktail sauce

 •  Seafood Salad: Loads of crab and shrimp in a creamy dressing.  Serve on rolls or with crackers

 •  Ham, Turkey, Chicken Salad; Tuna Salad; Egg Salad or Pimento Cheese Finger Sandwiches: Served on soft croissants or round rolls

•  Display of Raw Vegetables: Served with vegetable dip on side

 •  Seasonal and Tropical Fruit Display: Assorted strawberries, melons, grapes, pineapple and kiwi (fruits vary based on season)
